    　　网友质疑这种食品添加剂会致痛风 　　医生答疑：不能撇开剂量谈风险 　　痛风这一传统认知中的“老年病”，如今在年轻群体中也呈显著高发态势。近日，有不少网友发布视频称“呈味核苷酸二钠是致使尿酸偏高、痛风年轻化的杀手”。原本“默默无闻”地存在于许多调味料中的食品添加剂，就这样被推到了“风口浪尖”。它真的有这么大的“杀伤力”吗？记者采访南京明基医院营养科主任周彤了解到，对呈味核苷酸二钠来说，“撇开剂量谈风险”是不科学的，目前并没有足够的研究证据表明，食品中正常添加的呈味核苷酸二钠会导致痛风或显著增加痛风发生的风险。 　　在我国《食品添加剂使用标准》中，呈味核苷酸二钠属于允许合法使用的食品添加剂，广泛应用于酱油、蚝油、鸡精、复合调味料及各类方便食品中。虽然理论上说，它会通过增加嘌呤代谢间接影响尿酸水平，但其在食品中的添加量非常有限。“比如我们常用的蚝油，5毫升的蚝油中大约只含有1毫克的嘌呤，这个含量其实是非常低的。”周彤主任举例说，在正常合规使用的前提下，通过调味品摄入的呈味核苷酸二钠所带来的嘌呤负荷，对血尿酸水平的影响甚至远不及一次高嘌呤大餐(如动物内脏、浓肉汤、部分海鲜等)。 　　“添加剂导致痛风年轻化”的说法，在周彤主任看来，归因过于简单且缺乏充分证据。“年轻人痛风高发，与遗传、不良饮食结构(长期摄入高嘌呤食物)、肥胖、饮酒(尤其是啤酒)等因素密切相关。预防高尿酸血症和痛风的关键，重点也在于建立科学的生活方式，而非单纯恐惧某一种调味成分。” 　　针对痛风的防治，周彤主任也给出了具体建议： 　　1.调整饮食结构：严格限制高嘌呤食物的摄入，主要包括动物内脏、部分带壳海鲜(如牡蛎、蛤蜊、干贝等)、浓肉汤、火锅汤等。同时，需限制酒精摄入。 　　2.控制体重，但避免过快减重：肥胖是痛风的重要危险因素。对于超重或肥胖的年轻人，应将体重逐步控制在标准范围内。周彤主任特别提醒，有高尿酸血症的年轻人在减重时速度不宜过快，因为过快的体重下降可能导致体内酮体增加，竞争性抑制尿酸排泄，反而可能诱发痛风的急性发作。 　　3.保证充足饮水：对于心肾功能正常者来说，每日饮水量建议在2000毫升以上，以促进尿酸通过尿液排出。 　　4.规律运动：坚持适度有氧运动，如快走、游泳、骑车等，有助于控制体重、改善代谢。 　　5.定期监测：有痛风家族史、肥胖、嗜酒或饮食习惯不佳的高风险人群，要定期检查血尿酸水平。 　　扬子晚报/紫牛新闻记者 许倩倩 【编辑:胡寒笑】|dfg|
